Kellogs says there will be a nationwide shortage of its popular Eggo frozen waffles until next summer because of interruptions in production at two of the four plants that make them. The company's Atlanta plant was shut down for an undisclosed period by a September storm that dumped historic amounts of rain in the area. Meanwhile, several production lines at its largest bakery in Rossville, Tenn. are closed indefinitely for repairs. Now tell me this, how am I to feed my children breakfast? It will take until the middle of 2010 before shelves around the country are stocked. How am I to keep up with my food storage now, I ask you?
Already customers are noticing near-empty Eggo shelves on the freezer aisle at many grocery stores. That is because my boy are needing to EAT OK. I'm sorry if there are no CHOCOLATE CHIP EGGO WAFFLES in your Wal-mart Stores, but you know, we all cant have what we want! Obviously, I'm having to go ALL AROUND town just to feed my children so they wont STARVE!

In the event you look in your kitchen cupboards and see something that looks like something you could smoosh your brother's face in [in a fit of rage] - grab it / plug it in and do this:
4 3/4 ounces all-purpose flour, approximately 1 cup
4 3/4 ounces whole-wheat flour, approximately 1 cup
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron
Directions
In a medium bowl whisk [stir] together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet [runny] ingredients to the dry and stir until combined. Allow to sit for 5 minutes.
Ladle [spoon] the recommended amount [or as much as you want] of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron.
THEN - yell for your mom to clean it up. AND FREEZE THE EXTRAS FOR ME!!
Store brand. Taste fine, less expensive. And if all else fails (like that awesome post from Emz) then give Krusteaz french toast sticks a try. My kids eat them like candy! Which when you take into account the whipped cream they like to mix into their syrup, they almost are.
